Why shut the counting off?

As a former state employee in Texas, the department I worked for was asked to provide volunteers to be election judges. I had the privilege to volunteer in two national election cycles. One was in the Dallas area (including Dallas), the other was in the Houston area. In both of these times, the volunteer’s job was to go to each polling place during the day and, if necessary, “referee” between the party’s poll watchers. Part of the job, after the polls close, is to go to the official counting place for the counting. 2 to 3 am when it was all finished. Why it can’t be done in the other states is beyond me.
